GUYS IT’S CHRISTMAS EVE TOMORROW… I can’t handle it, it has come around so quickly this year! I am definitely one to get rather excited for Christmas and I like to find any reason to celebrate it! So this week, totally unplanned I did some baking when looking after my brother, we made some scrumptious chocolate festive cupcakes, covered in chocolate butter icing, chocolate stars and tiny little decorative stars (edible!) so all in all a lot of chocolate. Let me tell you suttin’… they were yummy, I know they may not look it but they were!
These little guys are so easy to make and are perfect for a last minuet “shit we need a pudding for the meal tonight!” recipe. It really is very simple but that doesn’t mean they don’t taste good hey?!
Prep Time: 15 mins at most (however for me it was more like 30 mins as I was with the bro)
Cooking Time: 12-15 mins
Decoration Time: 10 mins (again, this took rather a long time considering it was just myself who was icing, I think I need to get some classes in piping lets just say that!)
30g self raising flour
20g cocoa powder
50g caster sugar
1 tsp baking powder
Lets do this…
Always gotta preheat that oven baby. Don’t do a Tilly and turn it on last minuet. It needs to be at approximately 180 degrees.
Firstly your going to cream the butter and sugar together in a large bowl. You may want to soften your butter in the microwave for approx 10 secs first, then just mix together with sugar until creamed and smooth.
Beat the eggs first then add into the mixture. Be careful of shells! I hate this part of baking the most!
Next add the flour and cocoa powder a little at a time as you’ll find it puffs into a huge powdery cloud if not. Then add the baking powder and mix until smooth, get all the lumps out ect, you know the drill.
Put into cute christmassy cupcake cases, not too much as it’s already got a lot of self raising shizzle in there! And then put them into the oven, it’s as easy as that!
Icing / Decoration
150g icing sugar (may need more or less)
100g butter (may need more or less)
Gold stars (to sprinkle)
So here’s where it went a little wrong for me… I started off with the tiniest bit of icing thinking it would last all 12 cakes but no! I remade the icing about 5 times LOL. The measurements above were not the ones I went by but what are I recommend from my mistakes, it’s so easy to make in batches anyway so it doesn’t really matter!
Anyway onto the icing…
All you need to do is mix together the butter, icing sugar and cocoa powder (add a little at a time). Then mix mix mix. I found softening the butter before much more helpful when it came to mixing. I then I started icing with a piping bag – for the first time! For this particular design I was going for I started from the outside and drew a spiral in towards the centre. I know it doesn’t really look like that but I’m learning!
Finally I decorated the poorly iced cupcakes with chocolate stars these are specifically for baking from Dr Oetker, but if you do not have time, magic stars or any type of chocolate topping will do! Then I sprinkled some little gold stars on them which finished them off. I think they looked really cute and festive in the end!
